Merry Christmas Breakfast
GINGERBREAD FRENCH TOAST
Prep Time: 10 mins • Cook Time: 10 mins • Servings: 4
INGREDIENTS
• ½ cup milk
• 2 eggs
• 1 tablespoon white sugar
• 2 teaspoons rum extract
• 1 teaspoon salt
• ¼ teaspoon ground cinnamon
• ¼ teaspoon ground nutmeg
• ¼ teaspoon ground cloves
• ⅛ teaspoon ground ginger
• 4 slices white bread
• 1 tablespoon unsalted butter, or as needed
DIRECTIONS
• Whisk milk, eggs, sugar, rum extract, salt, cinnamon, nutmeg, cloves, and ginger together in a bowl. Dip each bread slice in egg mixture, turning to coat both sides.
• Melt butter in a nonstick skillet over medium heat. Add bread slices in a single layer; cook until golden brown, 3 to 5 minutes per side.
BREAKFAST SAUSAGE CASSEROLE
Prep Time: 20 mins • Cook Time: 1 hr 30 mins • Additional Time: 8 hrs Total Time: 9 hrs 50 mins • Servings: 8
INGREDIENTS
• 1 pound ground pork sausage
• 1 teaspoon mustard powder
• ½ teaspoon salt
• 4 large eggs, beaten
• 2 cups milk
• 6 slices white bread, toasted and cut into cubes
• 8 ounces mild Cheddar cheese, shredded
DIRECTIONS
• Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
• In a medium bowl, mix together mustard powder, salt, eggs and
milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly.
• Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.
• Preheat oven to 350 degrees F( 175 degrees C). Cover, and bake 45 to 60 minutes.
• Uncover, and reduce temperature to 325 degrees F( 165 degrees C). Bake for an additional 30 minutes, or until set
Tip: You can use croutons instead of making toast, and sage sausage for a different flavor.
